Partial Mash/60 min boil (15 litres, late extract addition), brewed using:

Mashed (75m @ 66.7C, 73C mashout for final 7m): 2.8kg Joe White Traditional Ale, 200gm Joe White Crystal 60, 100gm Joe White Crystal Wheat

1.2kg CBW Golden Light extract (added at end of boil)

Hops:

60 min: 8gm Warrior (16%)

20 min: 17gm Cascade (6.2%)

7 min: 19gm Amarillo (9.3%), 15gm Citra (12%), 17gm Centennial (10%)

Dry Hop (day 4): 25gm Citra, 25gm Galaxy

Yeast: US-05, fermented @ 18C

Brewed: 7 June 2013,  Bottled: 21 June 2013.    Size: 13.5l,  Lid Code: I

OG:  1.065/1.017   ABV: 6.8%    IBU:  62

Full extract/60 min boil (10 litres, late extract addition), brewed using:

2.3kg CBW Golden Light LME, .5kg CBW Bavarian Wheat LME

200gm Joe White Carahell, 100gm Joe White Crystal Wheat  – steeped 30 mins

Hops:

60 min:15gm Warrior (16%)

10 min: 15gm Amarillo (9.3%), 10gm Cascade (6.2%)

5 min: 10gm Amarillo, 10gm Cascade

0 min: 15gm Amarillo

Dry hopped (day 5): 20gm Amarillo, 20gm Cascade (Straight into FV, SG was ~1029)

Yeast: BRY-97, fermented @ 19C

Brewed: 10 May 2013,  Bottled: 29 May 2013.    Size: 13l,  Lid Code: D

OG:  1.055/1.018   ABV: 5.4%    IBU:  15

Full extract/40 min boil (10 litres), brewed using:

2.3kg CBW Bavarian Wheat LME

50gm Carafa Special I, 150gm Crystal 60, 150gm Crystal 120  – steeped 30 mins

Hops: 20gm Hallertau Mittlefruh (4.8%) @ 40

Wyeast 3068 Yeast, fermented @ 17 deg C (1 week), then 19C (10 days)

2.4kg CBW Golden Light LME, 0.6kg CBW Bavarian Wheat LME

150gm Crystal 60, 150gm Crystal 120, 150gm Crystal Wheat – steeped 30 mins

Hops: 25gm Cascade (6.2%) @ 60, 15gm Amarillo (9.2%) @ 20, 5 gm Cascade, 10gm Amarillo, 10g Nelson Sauvin (10.5%) @7

US-05 Yeast, fermented @ 18 deg C

Wyeast 3068 Yeast, fermented @ 22.5 deg C

2.5kg CBW Golden Light LME, 300gm CBW Bavarian Wheat LME, 300gm Dextrose

275gm Medium Crystal 120 – steeped 30 mins

Hops: 15 grams Cascade @ 60, 5gm Nelson Sauvin @ 20. 10gm Cascade @ 20, 7gm Nelson Sauvin @ 7, 15gm Cascade @ 7

US-05 Yeast, fermented @ 18 deg C

350gm Medium Crystal 120, 30gm Carafa Special 3, 120gm maltodextrin

16 grams Warrior hops @ 60, 20gm Willamette @ 10, 18gm Cascade @ flameout

US-05 Yeast, fermented @ 18 deg C

Full extract/30 min full boil (10 litres), brewed using:

0.7kg Light LME, 0.3kg Wheat LME & 0.2kg Amber DME

8 grams Warrior hops @ 60, 6gm Cascade & 6gm Nelson Sauvin @ 5, 2gm Cascade @ flameout

US-05 Yeast (half pack)

Dry hopped with 10 grams of Cascade on day 6 of fermentation

0.8kg Amber DME, 0.7kg Light LME & 0.6kg Wheat LME

10 grams Warrior hops @ 60, 10gm Amarillo @ 5

Full extract/partial boil (8 litres), brewed using:

2.2kg Briess Bavarian Wheat LME & 0.5kg Briess Amber DME

500gm dark wheat malt, 250gm CaraMunich III®, 150gm Carafa I®, steeped @  70 degrees for 30 minutes

Hallertauer Mittelfrüh hops: 25gm @ 60, 10gm @ 5, 5gm @ flameout

WB-06 Yeast

Brewed: 26 Nov 2012,  Bottled: 9 Dec 2012.    Size: 21.0l,  Lid Code: G

OG:  1.043/1.012   ABV: 4.7%    IBU:  45

Full extract/partial boil (7 litres), brewed using:

1.5kg Coopers light LME & 1.5kg Coopers Wheat LME

250gm Light Crystal Malt 120 steeped @ 70 degrees for 30 minutes

Amarillo hops: 30gm @ 60, 20gm @ 20, 30gm @ flameout (Note: This is over-hopped for the style.  Suggest to revert to 25 grams @ 60, 15 @ 20 and 20 @ flameout.  Unless you want to make an American IPA, in which case leave everything the same except for the flameout, which i’d still drop to 20 grams, just to temper the aroma/hop flavour.

Brewed using Woolies apple juice & fruit pulp yeast from Costante Imports.  Back-sweetened with 1.3l same juice at fermentation end prior to bottling.

    Hey man, I’m going to steal your recipe !!!!!!!!!!!!!!!….. or a version of it, I dont have bulk LME, so will make the most of the smaller tubs.
    I hope you take it as a compliment !!

      They’re up there for the taking mate, steal away! For the LME, you can replace odd amounts with DME, just do it at a ratio of about 80%. e.g. if my recipe calls for 3.5kg of LME, use 2 x 1.5kg cans of LME, and replace the left-over 500gm of LME with 400gm of DME.

    Beauty. Thanks. Got an amber with grains going at the mo. the US05 seems to be a bit sleepy, gone from 1.044-1.020 in 5 days. Thought it would be quicker given all the fermentables in there. Ah we’ll, it smells awesome !!! Hops are a mix of PAC gem for bittering and citra/Amarillo for flavour aroma. Can’t wait !
